what is this?!

• I made the Chicken Enchilada ‘hamburger’ helper but with a can of black beans undrained instead of meat
• then mixed hot sauce into my portion 
• sprinkled it with a touch of mexican blend cheese
• then half an avocado diced on top
• also a sprinkle of salt and red pepper flakes at the end

I’m a big fan of making the helper meals with black beans instead of meat for reasons of health and money. But still super easy. They often times sell the meals for $1.50, beans less than a $1. So several meals for less than $3. Booyah. 

I also make the cheesy hash brown ones with black beans and also add some corn in at the end. It makes SO MUCH food. I usually eat it for like 3 days after making it and it’s delicious. I would have added corn to this one if I had it but I’ll remember that later.
